Official State Dessert of Maryland
Due to the efforts of Jim Rapp, the past President of the Lower Eastern Shore Heritage Council, and many others, Maryland designated the Smith Island Cake the official state dessert in 2008. This cake usually has eight to ten layers with frosting or fruit between the layers. You frequently see the yellow cake with chocolate frosting, but the fig version - or banana -- are my favorite!
Mary Ada, the famous cake baker from Smith Island has turned out many a cake for clients from the Chesapeake Bay Foundation to LESHC. Look for her cakes when you visit Smith Island!
